New Wagyu Steak Program
White Squirrel Golf Club is proud to introduce its new Local Wagyu Program, created in partnership with Grazing Meadows Wagyu, a family-run farm in Huron County operated by Tim and Donna Prior.
Through this collaboration, White Squirrel is now purchasing whole Wagyu cattle directly from the farm. This sustainable, local-first approach supports Ontario agriculture and allows the restaurant to feature premium Wagyu dishes at below-market pricing.
The new program highlights the quality and character of Ontario-raised Wagyu through a selection of signature steakhouse entrées, each crafted with care by the White Squirrel’s culinary team. Butter-basted and pan-seared cuts like ribeye, striploin, and tenderloin showcase the rich marbling and depth of flavour that make Wagyu world-renowned.
In addition to its steak offerings, White Squirrel is committed to utilizing all parts of the animal. The program extends beyond its Wagyu Smash Burgers to dishes such as beef broths and has even inspired the new liver and onions Sunday feature, reinforcing a thoughtful and sustainable approach to menu creation.
